Turkey Cranberry Quesadilla

Substitute beans (such as black or pinto) or other meat for the turkey. For extra flavor, add a dash of cayenne pepper or chili powder before folding the quesadilla in half.  This recipe is a great way to use turkey leftovers! You can use dried cranberries instead of sauce if desired.



1 whole wheat tortilla

2 Tablespoons shredded mozzarella cheese

2 Tablespoons cranberry sauce

2 Tablespoons cooked turkey, chopped

1/3 cup spinach



Sprinkle cheese evenly over half of tortilla; add cranberry sauce, turkey and spinach, then fold tortilla in half over filling.  Heat skillet to medium high and lightly spray with cooking spray. Place tortilla on skillet and cook 2-3 minutes on each side or until golden brown.  Serves 1
