Pizza Quesadillas


½ cup pizza sauce

6 (7-inch) whole-wheat tortillas

2 cups mozzarella cheese, shredded

? cup mini pepperoni

3 tablespoons sliced black olives

Optional Toppings:

Peppers, mushrooms, pineapples, etc.


Spread about 1½ tablespoons of pizza sauce on half of each tortilla.  Sprinkle cheese over pizza sauce and top with pepperoni and olives. Fold tortilla in half.  Preheat a large skillet and spray with cooking spray. Cook tortillas, 2 or 3 at a time, over medium heat for about 2 minutes per side, and cheese is melted.  Cut each tortilla into 3 wedges.
