Iced Green Tea with Strawberries

This is a great way to use in-season strawberries. To reduce the calories, no-calorie sweeteners such as  Splenda® or Nectresse™ can be used in place of some, or all of the sugar. Strawberries are a great source of Vitamin C!

 

Ingredients:

1 pound fresh strawberries

¼ cup of sugar

¼ cup of water

Zest of lemon

4 cups iced green tea

 

Directions:

Wash, trim, and quarter strawberries to start.

Combine the strawberries, sugar, water and lemon zest in a small, heavy saucepan over medium heat.  Bring to a boil, then reduce heat to low and cook for about 25 minutes.  Strain pushing down on the strawberries to extract all the juices.  Place in a covered container and cool completely.  Add about 3 tablespoons of strawberry syrup to a cup of green tea.  Stir.  For a sweeter tea, add more syrup to each cup.  Serve over ice.
