This is definitely low carb “pasta”! Top with marinara sauce or make meatballs and sauce to go on top. What a great way to use in-season zucchini
3 medium zucchini or summer squash
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon of lemon zest
1-2 tablespoons freshly chopped basil
Optional toppings: pasta sauce, parmesan cheese, basil, tomatoes
Wash zucchini, remove ends and cut into long thin strips. Discard the core and seeds for this recipe. In a skillet, add oil on medium heat. Add half your noodles, you will need to cook in two batches. Add half the salt and lemon zest; toss and cook for 3-4 minutes. Halfway through, add half of your basil and cook until noodles are soft. Repeat with the second batch of noodles and serve immediately with sauce topped with cheese or tomatoes.
