Let your children help you measure and mix the ingredients for these waffles! Pumpkin is a nutrition powerhouse. It’s a good source of fiber and a great source of Vitamin A.
Ingredients:
2 ½ cups whole wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoon cinnamon
Dash cloves
Double dash nutmeg
½ can of pumpkin
4 eggs
2 cups of milk
¼ cup melted butter
Directions:
Combine all the dry ingredients in a large bowl and mix. Add the wet ingredients to the middle of the batter, slowly whisking the two together, making your way out to dry ingredients. This will prevent clumps. When well combined, cook according to your waffle iron directions. Serve with butter and syrup. Makes 10 waffles.
