If you want a sweeter muffin, add 5 tablespoons granulated sugar. For bite-size kid servings, make mini muffins. This recipe will make approximately 24 mini corn muffins.
Ingredients:
1¾ cups stone ground cornmeal
¾ cup whole wheat flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1½ cups buttermilk
2 large eggs
3 tablespoons margarine, melted and cooled
Non-stick cooking spray
Directions:
Preheat oven to 425º F. Spray muffin pan with non-stick cooking spray. In a large mixing bowl, combine the cornmeal, flour, baking powder, soda, and salt. In another medium mixing bowl, whisk together the eggs, buttermilk, and cooled margarine. Pour the buttermilk mixture into the dry mixture and stir only until all ingredients are moistened. Fill muffin cups about ¾ full and bake for 15 to 20 minutes.
Makes 12 to 15 muffins
