Vegetable Bean Soup

For variety, use other types of favorite canned beans, such as great northern beans or lima beans. This is a very heart-healthy recipe with brown rice, fresh vegetables, and beans!



2 teaspoons vegetable oil

1/2 cup onion, chopped

1/2 cup carrot, chopped

1 teaspoon thyme, ground

2 cloves garlic, minced

2 cups chicken broth

3/4 cup tomatoes, diced

1 can white cannellini beans, rinsed & drained

1 can dark red kidney beans, rinsed &drained

1/2 cup brown rice, cooked

1/2 bunch Kale leaves, washed & torn into pieces



Heat oil in a medium saucepan.  Add onion and carrot, and sauté until vegetables are tender. Add thyme and garlic and sauté for one more minute. Add broth, tomatoes, rice, beans, and kale. Simmer for 5-10 minutes.

Yields 3 servings.
