Vegetable Alphabet Soup

You can choose any vegetables you want.  Substitute fresh in-season vegetables and allow extra cooking time for them to get tender. This is a great rainy-day soup! Canned chicken can substitute for cooked chicken.

Ingredients:

2 teaspoons canola oil

? cup celery, sliced

¼ cup onion, chopped

¼ teaspoon dried basil

2 cups of frozen mixed vegetables

? cup carrots, shredded

3 cups low-sodium chicken broth

? cup alphabet noodles

1 ½ cups cooked chicken, shredded

1 cup baby spinach, chopped

 

Directions:

In a large pot, cook celery, onion, and basil in hot oil on medium-high for about 3 minutes.  Add mixed vegetables, carrots, and chicken broth and bring to a simmer.  Add noodles and cook for 7 minutes or until vegetables and noodles are tender.  When ready to serve, add chicken and spinach and cook until heated through.  Serves 4.
