Twice Baked Sweet Potatoes

Be sure to use fat free cream cheese and fat free milk to keep the calories lower!  Sweet Potatoes are one of the most nutritious vegetables.  A 5-inch baked potato contains about 120 calories—no more than a white potato.  Sweet potatoes can be used in many of the same ways as white    potatoes.

Ingredients:

2 sweet potatoes, large

2 oz. cream cheese, cubed

2 tablespoon fat free milk

1 tablespoon brown sugar

¼ teaspoon ground cinnamon

¼ cup pecans, chopped

Directions:

Heat oven to 425 degrees.  Cut potatoes lengthwise in half; place cut side down, in a foil lined 10×15 inch pan.  Bake for 30 to 35 minutes or until tender.  After the potatoes are cool to touch, scoop out the centers into a bowl, leaving ¼ inch thick shells.  Add cream cheese, milk,    sugar, and cinnamon to potato flesh and mash until well blended.

Fill shells with potato mixture; top with nuts.  Bake 8 minutes or until potatoes are heated through and nuts are toasted. Makes 4 servings.
