Tiny Pumpkin Quesadillas

Serve with fresh fruit or a small glass of fat-free milk for a fun and easy snack. Another fun idea is to make grilled cheese jack o lanterns, using whole wheat bread! Pumpkin faces can also be made on bagels or English muffins.

 

Ingredients:

2 whole-wheat tortillas

1/4 cup cheese

2-3 tablespoons fat-free refried beans

Plain Greek yogurt and kale (optional)

 

Directions:

Stack two tortillas and cut three small circles.  Split them apart and cut faces from one side and spread beans and cheese on the other.

Place the top tortilla on the bottom piece and microwave for 30 seconds to 1 minute.  Add kale leaf as stem and serve with yogurt if desired.
