Sweetheart Parfait

Since there is no cooking involved, your children will be able to help with the entire recipe!  For variety, try different fruits such as blackberries, blueberries, sliced mango, or sliced kiwi.  Do not give honey to children less than one year of age!

 

Ingredients:

½ teaspoon cocoa powder

1 teaspoon vanilla extract

2 teaspoons honey

1½ cups fat free vanilla yogurt

2 cups fresh raspberries or strawberries

¼ cup dark chocolate chips

 

Directions:

In a medium mixing bowl, whisk together cocoa powder and vanilla.  Add honey and yogurt into the cocoa mixture, stirring until well-combined (the mixture will turn light brown).  Spoon 2 tablespoons of the yogurt mixture into the bottom of four clear glasses.  Top with some  raspberries or sliced strawberries, and repeat the process until all the yogurt mixture and fruit are used.  Sprinkle each parfait with the dark chocolate.  Serve immediately, or refrigerate until ready to serve.

Makes 4 parfaits
