Sweet Potato Cake in a Mug!


1/3 cup cooked sweet potato, mashed

2 Tablespoons peanut butter

1 Tablespoon maple syrup

1 egg

¼ –½ teaspoon cinnamon

½ teaspoon vanilla extract

A handful of chocolate chips

Ice cream for topping, optional


Combine all ingredients in a small bowl and mix. Pour into greased mugs, mason jars, or ramekins.  Microwave for 1 minute and 45 seconds individually.  Eat straight out of a jar or let cool slightly and transfer to a plate.  Top with ice cream if desired.
