
These are not super sweet, so they can be eaten for a snack, dessert, or even breakfast! Add a teaspoon of vanilla extract for more flavor, if desired. For variety, add dark chocolate chunks, frozen blueberries, dried cranberries or raisins to these.
Ingredients:
½ cup cooked, mashed sweet potato
½ cup mashed banana
¼ cup peanut butter
2 eggs
Cinnamon, to taste
Mix-ins, such as dried cranberries, chocolate chips, fruit, etc.
Directions:
Smash the sweet potato and banana together in a small bowl. Add peanut butter, eggs, and cinnamon and mix well. Stir in any additional mix-ins and spoon into a greased mini muffin tin. Bake at 375° for 18 minutes. Serves 14.
