Sweet potatoes are a great source of Vitamin A.
Ingredients:
2 medium sweet potatoes
2 Tablespoons butter
2 Tablespoons brown sugar
2 Tablespoons orange juice
1/2 teaspoon ground cinnamon
1 cup corn flakes, crushed
Directions:
Microwave or bake sweet potatoes until soft and scoop out the flesh into a medium bowl. Mash up potatoes and add butter, brown sugar, orange juice, and cinnamon. Shape mixture into 1 1/2 inch balls, roll in corn flakes, and place on a baking sheet coated with cooking spray. Bake at 350degrees for 15-20minutes or until golden and heated through. Makes 12 balls, serves 4.
