Serve with extra strawberries on the top or side of the quesadilla. For variety, try different fruits: blueberries, mango slices, or raspberries. Kids would love to help spread the cream cheese and preserves onto the tortilla!
Ingredients:
4 whole wheat tortillas
1 tablespoon margarine, melted
6 ounces fat-free cream cheese
2 tablespoons seedless strawberry preserves
1½ cups sliced strawberries (fresh or frozen
Directions:
Preheat oven to 400º F. Brush one side of each tortilla with melted margarine. Place buttered side down on a large baking sheet. In a small mixing bowl, combine cream cheese and strawberry preserves. Spread the mixture on half of each tortilla. Top the cheese mixture with sliced strawberries. Fold tortillas in half. Bake for about 8 minutes, or until tortillas are lightly browned. Cool for 1 to 2 minutes, and then transfer to a cutting board and cut each tortilla into 3 to 4 wedges. Serve while warm. Serves 4
