Summer Fruit Pizza

Substitute whole wheat tortillas for pizza dough by baking tortillas on a cookie sheet for approximately 5 minutes or until  golden brown on 350 F degrees.  Whole wheat pita bread, or even English muffin, can also be used in place of the purchased pizza dough. Let your children choose their favorite fruits, and they can place those fruits on their individual pizzas.  Children can also have fun spreading the frosting on the crust.

 

Ingredients:

Crust-

1 pound purchased pizza dough

1 tablespoon melted butter

2 tablespoon sugar

Frosting-

1 (8 ounce) package fat-free cream cheese, softened

¼ cup sugar

1 teaspoon finely grated orange zest

½ teaspoon vanilla extract

Topping-

Assorted fruit (we used blueberries, banana slices, kiwi slices, strawberry halves, peach slices, and pineapple tidbits).

 

Directions:

Heat the oven to 400 degrees.  Spread the dough in an ungreased 12 inch pizza pan.  Brush on the butter and sprinkle on the 2 tablespoons of sugar.  Bake the crust until golden brown, 12 to 15 minutes.  Cool the crust on a wire rack.  In a medium bowl, combine the frosting ingredients with a rubber spatula.  Stir until smooth.  Spread frosting over the cooled crust. Gently press in the fruit.
