2 15-oz cans of black beans, rinsed and drained
1 large ear of fresh corn, shucked
1 cup halved grape tomatoes
1 cup chopped red, yellow, and/or orange bell pepper
½ cup chopped red onion
½ cup chopped cilantro
1 medium jalapeno, finely chopped (remove seeds if you want a milder flavor)
Juice of 1-1/2 limes
1 Tbsp. olive oil
1 tsp. salt, to taste
½ tsp chili powder
½ tsp ground cumin
1 medium avocado-pitted/peeled/chopped, Feta Cheese, or Lime Wedges
In a large bowl, combine black beans, corn, tomatoes, bell pepper, onion, cilantro, jalapeno, lime juice, olive oil, salt, chili powder, and cumin. Stir well. Adjust flavors as needed. Cover and chill for several hours to enhance the flavors.
Garnish with the avocado, crumbled feta, or lime wedges. Serves 6-8.
