Stuffed Fruity French Toast  

Try different fruits for variety, such as blueberries, chopped raspberries, or chopped bananas.


2 eggs

1/2 teaspoon almond extract

1 teaspoon cinnamon

4 slices whole wheat bread

For Filling:

1 cup chopped strawberries or peaches

1/2 cup low-fat ricotta cheese


Mix the chopped strawberries with the ricotta cheese. Lay out two pieces of bread, spread berry filling in the middle and squish the pieces of bread together to make a sandwich.  Combine eggs, almond extract, and cinnamon in a small bowl.  Dip the sandwich into egg mixture on both sides and cook on griddle on medium heat until egg is cooked and bread is golden brown.
