Ingredients:
Nonstick cooking spray
1 tablespoon olive oil
1/2 lb. boneless chicken breast
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon chili powder
1/2 cup great northern beans, drained and rinsed
1/2 cup light sour cream
1/2 cup butternut squash puree
1/2 cup reduced-fat cheddar cheese
4 (8in.) whole wheat tortillas
1/2 cup salsa
Directions:
Coat a large skillet with cooking spray and set over medium-high heat; when heated add olive oil. Sprinkle chicken with salt, pepper, and chili powder, add to the pan, and cook until no longer pink inside (4 to 5 minutes per side). Reduce heat to low, cover, and cook 10 minutes longer. Cut into thin slices.
In a small bowl, mash beans with sour cream. In another bowl, stir squash puree and cheese together.
Spread bean mix over two tortillas, arrange chicken on top. Spread cheese mix over other tortillas and press together. Spray electric skillet with cooking spray, add quesadillas, and flip when brown (1-2 minutes per side). Cut into wedges and serve with salsa.
