This is a great way to use the summer bounty of yellow squash and zucchini! Your children will love to help with this recipe – stirring the vegetables before cooking, using the spray butter, sprinkling with seasoning salt, and adding the cheese on top.
2 medium zucchini, sliced
2 medium yellow squash, sliced
¼ medium white or yellow onion, chopped
¾ cup grated Colby-Jack/Cheddar cheese
Place zucchini and yellow squash in a medium size microwave-safe dish. Add chopped onion and mix well. Spray with butter until covered. Evenly sprinkle seasoning salt, as desired. Stir all ingredients together, mix well. Cover and place in microwave for 5 minutes or until vegetables are fork-tender. After cooking, sprinkle with cheese and cover again to allow cheese to melt.
Makes approximately 6 servings
