Spaghetti with a Secret

January 4th is National Spaghetti Day.

This is a great way to “hide” veggies! Other veggies to hide could include zucchini, yellow squash, and red pepper. Hide veggies in different whole-grain kinds of pasta, such as linguini, spirals, farfalle, and elbows.

Ingredients:

8 oz. Whole wheat spaghetti

2 cups frozen broccoli and carrots, steamed

4 cups low-sodium spaghetti sauce

¼ cup parmesan cheese, grated

Directions:

Cook spaghetti according to package, drain and rinse with cold water; set aside.  Blend steamed veggies in a blender with sauce until they are no longer visible. Heat sauce in a large pot.  Toss spaghetti with sauce and heat through. Divide among 4 plates; sprinkle cheese over top.
