Southwestern Chicken & Rice

INGREDIENTS

2 cups brown rice, cooked

1-pound chicken breast, cut into strips

Southwestern Seasoning Mix:

2 teaspoons cumin

2 teaspoons chili powder

1-teaspoon oregano

1-teaspoon paprika

1-teaspoon coriander

1-teaspoon onion powder

1/2-teaspoon black pepper

A dash of cayenne pepper

2-3 cups white corn & black bean salsa

DIRECTIONS

  1. Prepare rice according to package directions
  2. Heat frying pan, spray with non-stick cooking spray.  Add chicken and seasoning mix, cook until chicken is no longer pink.
  3. Stir in salsa and cooked rice & heat to serving temperature (at least 165 degrees) and serve.
