INGREDIENTS
2 cups brown rice, cooked
1 pound chicken breast, cut into strips
2-3 cups white corn & black bean salsa
1/2 cup shredded cheese
Southwestern Seasoning Mix:
2 teaspoons cumin
2 teaspoons chili powder
1 teaspoon oregano
1 teaspoon paprika
1 teaspoon coriander
1 teaspoon onion powder
1/2 teaspoon black pepper
A dash of cayenne pepper
DIRECTIONS
- Prepare rice according to package directions.
- Heat frying pan, spray with non-stick cooking spray. Add chicken and seasoning mix, cook until chicken is no longer pink.
- Stir in salsa and cooked rice.
- Sprinkle with cheese and heat until cheese is melted.
