Southwest Pasta Salad

For an extra bonus, sprinkle reduced-fat cheddar cheese on top of the salad just before serving.  This is a great meatless meal!  For variety, substitute other types of canned beans, such as kidney or great northern beans.

 

Ingredients:

16 ounces whole wheat twist pasta

1 can pinto beans

1 can black beans

2 cans whole kernel corn

1 small can sliced black olives

1 jar (16 ounces) chunky Picante sauce

1 package taco seasoning

1 cup fat-free Italian dressing

 

Directions:

Prepare pasta as directed on the package.  While pasta is boiling, drain and rinse the beans, corn, and olives in a large strainer.  Drain   pasta in a large bowl (do not rinse pasta).  Combine beans, corn, olives, and Picante sauce with the drained pasta.  Add taco seasoning and dressing.  Mix well.  If possible, chill at least 2 hours prior to serving.
