For added color and nutrition, add chopped orange, yellow or red bell peppers while sautéing the beans. Wait to add the picante sauce after the eggs are set, to keep the egg mixture from turning pink. Cut tortillas in halves (or thirds). Serve with milk for a great child-size breakfast!
1 tablespoon olive oil
½ cup rinsed and drained low sodium black beans
4 lightly beaten eggs
¼ cup mild chunky picante sauce
¼ cup shredded Monterey jack cheese
Dash of pepper
6 corn or whole wheat tortillas
Heat oil in skillet over medium heat and add beans. Sauté for one minute. Add eggs, salsa, cheese, and pepper and stir until eggs are set, about 2 to 3 minutes. Divide mixture among 6 tortillas, roll and wrap them in foil.
