Scrambled Eggs with a Twist

Ingredients:

4 eggs

¼ lb. leftover taco meat

¼ large green pepper, diced

½ tomato, diced

½ cup shredded cheddar cheese

1 teaspoon cooking oil

Directions:

Beat eggs in a bowl. Heat oil in a skillet on medium heat. Add peppers and sauté for 3 minutes.  Add taco meat and cook until warm, then add tomatoes and sauté for another 2 minutes.  Add eggs and stir until fully cooked.  Spread cheese over top of eggs and leave until melted.  Try serving with hash browns
