Quinoa Bean Salad


4 cups of cooked quinoa

1 can strain rinsed pinto beans

1 can strain rinsed black beans

2 small  stalks of celery, diced

1 small red bell pepper, seeded and diced

1 small yellow bell pepper, seeded and diced

4 green onions, sliced

½ cup fresh cilantro, chopped

3 tablespoons red wine vinegar

3 tablespoons honey

1 ½ teaspoon ground cumin

Juice of ½ lime

Juice of ½ lemon

Salt and pepper to taste


Cook quinoa according to package, usually cooks for 10-15 minutes.  Once the quinoa is cooked, immediately chill. Once chilled, add it to a large bowl with all the ingredients and mix thoroughly.  Chill before serving.
