Works best to eat on the same day, the cauliflower smell can be overly prominent as leftovers. This is another great way to hide veggies at the dinner table for those picky eaters. Cauliflower is an excellent source of Vitamin C, Vitamin K, folate, and Vitamin B6. February is National Heart Health month, adding more vegetables to your diet can help be more heart-healthy.
Ingredients:
1 medium head of cauliflower or
1 package fresh cauliflower rice in the produce section
2 tablespoons sesame oil
1 large carrot, minced
1 cup frozen edamame
2 beaten eggs
3 tablespoons low-sodium soy sauce
6 green onions, minced
Directions:
If using the head of cauliflower, shred using the largest side of a grater – it should look like small grains of rice. Heat 1 tablespoon of oil in a large skillet over medium-low heat. Add carrots and garlic and stir until fragrant, about 5 minutes. Add cauliflower, edamame, and rest of oil to the pan and cook the cauliflower to a soft texture (not mushy). Make a well in the middle of the pan. Turn down the heat, and add eggs. Stir gently until eggs are fully cooked. Stir in soy sauce and green onions just before serving. Serves 4.
