Pumpkin Spice Muffins

Top muffins with delicious fat-free cream cheese frosting or fat free whipped topping.


1 box Spice Cake Mix

1-15oz. Can  pumpkin

2 teaspoon vanilla

Chopped walnuts, (optional)


For Turkeys:

Red and green apple


Sliver of carrot

Icing and food coloring


Preheat oven to 350 degrees and spray muffin pan with cooking spray. Stir together cake mix, pumpkin, vanilla, and walnuts until  mixed through.  Add a small amount of milk or water, if needed.  Spoon mix into muffin pans,  filling about 3/4 full. Bake for approximately 25 minutes. Check if done by inserting a toothpick in center of muffin. If it comes out clean, they are done! Let cool completely.

To make Turkeys: Dye frosting using a couple drops of food color. Frost muffins. Cut apples into thin tapered  slices. Square off each slice. Make the beak by cutting a thin slice of carrot and then making a slit in the green grape and inserting beak.  Poke small ends of feathers into     muffin and set head on  muffin, using the frosting as glue. Add tiny dots on the grape for eyes. Makes 18 turkeys.
