This delicious pudding is a great treat during Halloween and Thanksgiving. However, canned pumpkin is available year-round, so you can enjoy the pudding any time of the year! While this pudding has some fiber, the pumpkin is also a very good source of Vitamin A. If your store has a fat free or sugar free instant vanilla pudding, purchase either of those for a healthy substitution.
1 (3.4oz) package instant vanilla pudding mix
1 ½ cup cold nonfat milk
1 cup canned pumpkin
½ teaspoon cinnamon
In a medium bowl, beat pudding mix and milk together until well blended, about 2 minutes. Stir in pumpkin and cinnamon. Cover and chill according to pudding package directions before serving.
