This is like pumpkin pie in a cup! It will be great on a Fall day! One serving of this shake is a good source of protein and is low in fat. Make sure to blend very well so that the brown sugar doesn’t make the shake gritty.
2 cups reduced-fat vanilla ice cream, softened
1 cup fat-free milk
2/3 cup canned pumpkin
1/4 cup packed brown sugar
3/4 teaspoon pumpkin pie spice
3 tablespoons frozen fat-free whipped topping, thawed
Combine all the ingredients in a blender and process until smooth. Pour 3/4 cup shake into 4 glasses. Top each with a dollop of whipped topping and sprinkle with a dash of pumpkin pie spice, if desired.
