For variety, use red, orange, and/or yellow bell peppers. These are a great low-carb entrée, snack, or appetizer.
1 large green bell pepper
1/4 cup pizza or spaghetti sauce
1/4 cup mozzarella cheese, shredded
Pinch of red pepper flakes
Pinch of basil or parsley
Any topping options, ex. pepperoni, tomatoes, mushrooms, broccoli, etc
Preheat oven to 350 degrees F. Slice off each of the four sides of your pepper and lay flat on baking sheet. Top with sauce, cheese and your choice of veggie toppings and bake for 10 minutes. Towards the end, switch your oven to broil to make the cheese bubbly and toasted. Add a pinch of red pepper flakes and basil/parsley if desired.
