You can use any fruit combinations for this recipe like fresh apples or halved grapes. Try using corn tortillas instead of whole wheat tortillas. Add cilantro, pepper jack cheese or jalapeños to add some spice!
Ingredients:
4 medium whole wheat tortillas
1 cup cheddar cheese, grated
1 cup fresh pears, sliced thin
½ cup green or red peppers, finely chopped
2 Tablespoons minced green onion
Directions:
Place ¼ of cheese on two tortillas and then divide pears, peppers, and onion between two tortillas. Top each tortilla with another ¼ of cheese and top with remaining tortillas. Heat skillet to medium heat and cook each quesadilla for 2-4 minutes per side or until golden brown. Cut each quesadilla into 4 pieces and serve. Yields 4 servings.
