Oatmeal Cornbread Muffins

This recipe will also make approximately 24 mini muffins, which are perfect for little kid-size hands!  Let your children help measure and mix the ingredients!  For a healthy change, use fat-free milk.  You won’t taste the difference and the total fat will be decreased.



1½ cups quick oats

1½ cups cornmeal

2 tablespoons baking powder

1 teaspoon poultry seasoning

1 teaspoon salt

3 large eggs

1½ cups fat-free milk

1/3 cup vegetable oil

1/3 cup granulated sugar


Preheat oven to 400 degrees F. Spray muffin tins with non-stick cooking spray.  In a large bowl, mix together oats, cornmeal, baking powder, poultry seasoning, and salt.  In  another bowl, beat the eggs.  Add the milk and oil to the egg mixture.  Then add the sugar and mix well.  Put the egg mixture into the oat mixture and stir slightly to combine ingredients.  Pour into sprayed muffin tins and bake approximately 20 minutes.  Makes 12 muffins.
