No Crust Veggie Quiche

To lower the fat content of this recipe, substitute 2 egg whites for each whole egg.  Egg dishes are great for breakfast, lunch, dinner, and snacks!  Add skim milk, fruit, and whole wheat bread for a complete meal.


6 broccoli florets

½ red pepper, chopped

1 small zucchini, chopped

6 eggs

1 teaspoon  canola oil

5 ounces Provolone cheese, shredded


Chop veggies and sauté with oil in a pan until tender.  Allow cooling.  Beat eggs in a bowl, season with salt and pepper.  Add the veggies and cheese to the bowl and mix well.  Spray glass pie plate with cooking spray.  Pour the egg mixture into the pie plate and bake at 350? for 15-17 minutes. Serves 4.
