
This cookie is full of healthy nutrition, especially Fiber and Vitamin A. Making these cookies will make your home smell delicious– just like Fall!
Ingredients:
2 tablespoons canola oil
1/3 cup maple syrup
1/4 cup pumpkin puree
1/4 cup fat-free milk
2 tablespoons peanut butter
1/2 teaspoon vanilla extract
2 cups old-fashioned oats
1/4 cup dried cranberries
2 tablespoons chopped pecans
1 1/4 teaspoons cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves
1/8 teaspoon salt
Directions:
In a saucepan, over medium heat whisk together canola oil, syrup, pumpkin, milk, and peanut butter until smooth. Bring mixture to boil then remove from heat immediately. Stir in vanilla, then add in the remaining ingredients and combine using a spatula. Line a baking sheet with parchment paper or wax paper and use a spoon or small ice cream scoop to scoop out the cookie dough (about 1 1/2 tablespoon size). Place cookies in the freezer or fridge to set for about 15-20 minutes before eating. Store cookies in an airtight container in the fridge or freezer. Makes about 20 cookies.
