Nana-Oat Muffins  

These muffins can be made in regular muffin cups, or they can be made in the small kid-sized, mini muffin cups.

These muffins are relatively low in calories and fat, and are a good source of dietary fiber.

Ingredients:

2 cups Cheerios cereal

3/4 cup flour

1/2 cup whole wheat flour

1/3 cup brown sugar

1 teaspoon baking powder

3/4 teaspoon baking soda

1 cup bananas (2-3 medium), mashed

2/3 cup fat free milk

3 tablespoons vegetable oil

1 egg white

Directions:

Preheat oven to 400 F and spray muffin pan.   Place Cheerios in a Ziploc bag and crush into fine pieces.  In a large bowl, mix cereal, flours, brown sugar, baking powder and  baking soda. Stir in the remaining ingredients until just moistened. Pour batter into each muffin cup 3/4 full. Bake 18 to 20 minutes or until golden brown.
