Mexi-Ranch Pasta Salad

4 cups whole wheat rotini
1 can black beans, rinsed
1 cup frozen corn, thawed, drained
½ cup red pepper, chopped
2 green onions, thinly sliced
½ cup Light Ranch dressing
1 Tablespoon taco seasoning mix
1 tablespoon fresh lime juice
½ cup 2% shredded cheese
? cup parsley or cilantro, minced


Cook, rinse, and drain pasta and place in a large bowl.  Add beans, corn, peppers, and onions and mix lightly.  In a smaller bowl, mix dressing, seasoning, and lime juice.  Add to salad and toss. Sprinkle cheese and parsley, mixing lightly.  Serves 8, 1 cup each
