These lemon squares are fancy treats, but they are fairly simple to make. Just allow plenty of time for preparation, cooking, and cooling.

Prep: 25 minutes Bake: 35 minutes Cool: 1 hour
Ingredients:
Crust-
Nonstick cooking spray
¾ cup all-purpose flour
3 tablespoons granulated sugar
¼ cup butter or margarine
Filling-
1 egg
1 egg white
? cup granulated sugar
2 tablespoons all-purpose flour
1 teaspoon finely shredded lemon peel (zest)
2 tablespoons lemon juice
1 tablespoon water
¼ teaspoon baking powder
Sifted powder sugar (optional)
Directions:
Lightly coat a square baking pan with cooking spray; set aside. In a small bowl combine the flour and the sugar. Using a pastry blender or 2 knives, cut in butter until mixture looks like coarse crumbs. Press mixture into the bottom of the pan. Bake for 15 minutes at 350 degrees F.
For the filling, use a small mixing bowl and combine the egg and egg white. Beat with a mixer on medium until frothy. Add the sugar, flour, lemon juice, water, and baking powder and mix on medium for 3 minutes or until slightly thickened. Stir in lemon zest. Pour filling over hot crust.
Bake for 20-25 minutes more or until edges are light brown and center is set. Cool on a wire rack. Cut into 16 squares. If desired, sprinkle with sifted powdered sugar. Makes 16 pieces.
