This is a great way to “hide” vegetables. Try different herbs and seasonings to fit your family’s tastes.
Ingredients:
1 medium head of cauliflower, cut into florets, or
1 package fresh cauliflower rice in the produce section
5 slices turkey bacon, chopped
4 cloves garlic, minced
1/4 cup fat-free milk
1 tablespoon butter
2 tablespoons plain fat-free yogurt
Salt and pepper to taste
1 bunch chives, chopped
1/2 cup cheddar cheese, shredded
Directions:
If using the head of cauliflower, boil florets in a large pot of water until softened, about 20 minutes. Drain and set aside. Cook the bacon until crisp in a large skillet, chop, and set aside. Pour off excess grease, leaving about a tablespoon in the pan. Return to medium heat. Add in the garlic and saute until fragrant. Add in cauliflower and mash with a fork or potato masher. Mix in milk, butter, and yogurt, continuing to mash the cauliflower until no chinks remain. Season with salt and pepper. Mix in half the cheese, chives, and bacon. Divide into bowls and top with remaining cheese, chives, and bacon.
