Layered Summer Salad


4 cups fresh spinach, torn

1 ½ cup reduced-fat Colby Jack  shredded cheese, divided

2 cups sliced fresh mushrooms

1 small red onion, sliced

2 tomatoes, chopped

1 –16 oz. package frozen peas

½ cup fat-free mayonnaise

½ cup fat-free sour cream

¼ cup chopped fresh basil

2 tablespoons bacon pieces



Layer spinach, 1 cup of cheese, mushrooms, onions, tomatoes, and peas in a large serving bowl.  Mix mayo, sour cream, and basil in a separate bowl. Spread over the entire salad and refrigerate for 5 hours.  Sprinkle with remaining cheese and bacon before serving.
