Ingredients

1 whole bone-in turkey breast, 6.5 to 7 pounds

1 tablespoon minced garlic (3 cloves)

2-teaspoon dry mustard

1-tablespoon rosemary leaves

1-tablespoon sage leaves

1-teaspoon thyme

1-teaspoon black pepper

1-tablespoon olive oil

2 tablespoons lemon juice

1-cup dry white wine

Directions

  1. Preheat oven to 325 degrees
  2. Place turkey breast, skin side up, on a rack in a roasting pan
  3. In a small bowl, combine garlic, mustard, herbs, pepper, olive oil and lemon juice to make a paste
  4. Smear the paste over the meat; pour wine into the bottom of the pan
  5. Roast the turkey for 1 hour 45 minutes to 2 hours until the skin is golden brown and an inserted thermometer reads 165 degrees. 
  6. Remove from oven; discard the skin.
  7. Cover with foil and allow to rest for 10-15 minutes.  Slice and serve.
