Healthy Avocado Pizza

Substitute a whole wheat tortilla as the pizza crust, if desired. A great substitute for the sour cream could be plain greek yogurt. A small amount of shredded cooked chicken or chopped turkey bacon could be added to increase protein.

Ingredients:

1 sheet of puff pastry, thawed

1 ½ avocado, cubed

2 medium tomatoes, seeded, cored and diced

½ medium red onion, thinly sliced

1 ? cups shredded mozzarella or Colby Jack

1 container basil pesto (use as desired)

 

Avocado sauce:

½ cup mayo

½ cup sour cream

2 Tablespoons fat-free milk

1 green onion, chopped

2 garlic cloves, minced

½ cup cilantro, chopped

1 avocado

Juice from lemon

Salt and pepper

Directions:

Combine all ingredients for the avocado sauce in a blender and mix well.  Preheat oven to 400°F. Roll out the pastry onto a floured surface to ¼ inch thick. Pierce the puff with a fork and transfer to a parchment-lined pizza pan.  Spread the pesto in a thin, even layer on the pastry and sprinkle with cheese. Use as much pesto as you would like. Bake for 10 minutes until golden brown.  Remove from oven and place tomatoes, onions, and avocado on top.  Drizzle with the desired amount of sauce and enjoy!
