Fresh Vegetable-Egg Salad Sandwiches

Substitute other favorite ingredients in place of these, such as, red bell peppers, pickles, olives, etc. for a different taste.  For another fun change, serve on your child’s favorite crackers!

Ingredients:

4 hard-boiled eggs, peeled

½ cup thinly sliced celery

½ cup shredded carrot

½ cup sliced zucchini

2 tablespoon sliced green onions

1/3 cup light mayonnaise or Salad dressing

1 teaspoon dried dill weed

1 teaspoon Dijon mustard

1/8 teaspoon salt

4 slices whole wheat bread

1 tomato, sliced

Lettuce leaves

 

Directions:

Chop eggs and place in medium bowl.  Add all remaining ingredients except bread, lettuce and tomato; mix well.  Cover and refrigerate at least one hour to blend flavors.  To serve, cover one side of bread with egg mixture and top with lettuce, tomato, and other piece of bread. Slice in half.  Serves 4
