Make this recipe with lots of different variations. Add apple, avocado slices, bell pepper slices, corn, beans, tomatoes, brown rice, diced roasted squash or sweet potatoes. Use a sweet vinaigrette dressing or family favorite to serve on this salad. To keep calories lower, lightly dip your salad items into the dressing– don’t drown your healthy salad with dressing. This a great side dish to bring to your next holiday party!
1 bunch of green leaf lettuce, rinsed and sliced into thin strands
1 cup fresh spinach, chopped
? cup pomegranate seeds
¾ cup frozen red grapes, sliced
2 mandarin oranges, sliced
1 small onion, diced
¼ cup chopped pecans
2 tablespoons dried cranberries
1 small pear, chopped
Simply toss all ingredients in a large bowl with dressing of choice. Serve immediately or chill ahead of time to serve cold. Don’t forget to top your salad with a “star” made from a piece of toast. Cut with a cookie cutter or free hand with a knife. Makes 6-7 cups.
