Fantastic French Toast

Sweet potato is a great source of Vitamin A!  One medium sweet potato will yield approximately ¼ cup mashed.  Let your children do all the mashing, mixing, and dipping for this recipe.  An adult will need to cook the toast on the hot skillet.  Top the French toast with fresh fruit, lite syrup, or a small amount of powdered sugar.

 

Ingredients:

¼ cups mashed sweet potatoes

4 large eggs

1/8 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

8 slices of whole wheat bread

 

Directions:

Beat together the sweet potatoes, eggs, cinnamon, and nutmeg until smooth.  Dip the slices of bread into the egg mixture, on both sides, until the bread is moist all the way through.  Heat a large lightly oiled skillet to medium heat.  Cook the French toast in batches until golden brown on both sides – and no longer wet in the center (3-4 minutes per side).

Serves 4
