Deviled Egg Boats

For easy peeling, place hard cooked eggs into cold water as soon as they are done.  Peel them immediately under cold running water.  Let your children help peel the eggs and spoon the egg mixture into the boats!


8 hard-boiled eggs, peeled

½ cup miracle whip dressing

2 tablespoon Sweet pickle relish

2 teaspoon Dijon mustard

¼ teaspoon salt

1 large red, orange, or yellow bell pepper

Dash of pepper

Dash paprika


Cut eggs lengthwise in half. Remove yolks and add to a medium bowl.  Add dressing, relish, mustard and seasonings and mix well.

Next, make the sails. Cut bell pepper into 1 inch wide strips and then into 1 inch squares. Slice each square diagonally.  Spoon yolk mixture evenly into centers of whites.  Stick the sail upright into the filling and sprinkle with paprika.  Serves 16
