Crunchy Breakfast Bake


This is a great way to use leftover ham!
 
One package (12 ounces) bulk port sausage or turkey bacon, cooked and crumbled, can be used instead of ham.
 
For variety and good nutrition, add chopped spinach with the other vegetables.
 
Experiment with different cereals to see which ones you like best!
 

Ingredients:

2 cups chopped fully cooked ham

1 medium red bell pepper

2 tablespoons chopped onion

4 ounce can mushroom, drained

5 cups Chex cereal (Corn or Rice)

1 cup shredded Cheddar Cheese

1 cup baking mix (Bisquick)

2 cups fat-free milk

4 eggs

Directions:

Heat oven to 375°.  Spray a 13x9x2 dish with cooking spray.  Cook ham, pepper, onion, and mushrooms for 3 minutes, stirring often.  Spread 3 cups cereal in baking dish.  Sprinkle with ham mixture; top with cheese.  Using a fork, stir the baking mix, milk, and eggs in a separate bowl.  Pour evenly over cheese; sprinkle with remaining cereal.  Bake uncovered 25 to 30 minutes, or until the knife inserted in the center comes out clean.  Makes 12 servings.
