Cran-Apple Acorn Squash

Ingredients:

2 medium acorn squash

1 cup fresh cranberries, chopped

1 cup 1/4inch cubed apple

1/4 cup packed brown sugar

3 tablespoon melted butter

1/2 teaspoon grated orange peel

Directions:

Bake whole squash for 2 minutes in the microwave on high.  Turn over, cook 2 more minutes.  Let cool while mixing together the remaining ingredients in a   medium bowl.  Cut squash in half and remove seeds.

Spoon cran-apple mixture into squash.  Return to a microwave-safe dish, cover with saran wrap, and cook for 10-15 minutes on high or until tender. Let stand for 5 minutes. Makes 4 servings
