3 cups cooked chicken breast, boned, skinned and cubed or shredded
1½ ups seedless grapes, halved
½ cup celery, diced
2 tablespoons green onion, minced
1/3 cup low-fat mayonnaise
1/3 cup plain non-fat yogurt
1 tablespoon lemon juice
Salt and pepper to taste
Tip: Make sure grapes, celery, and green onions are sliced small if serving to young children.
- In a large bowl combine chicken, grapes, celery, and green onion.
- In a small bowl combine mayonnaise, yogurt, and lemon juice and mix until smooth.
- Pour dressing over chicken mixture and mix until evenly coated.
- Serve immediately or chill and serve.
